This E3N study published by researchers from the Exposome and Heredity team analyses the association between dietary exposure to acrylamide (a chemical substance formed during the cooking of certain foods) and the risk of mortality. Greater exposure to acrylamide appears to be associated with an increased risk of death from all causes, cardiovascular disease, cancer and lung cancer.
